3-Ingredient strawberry smoothie popsicles



Summer is officially here, which means it's time to cool down with some sweet and fruity treats! I made these strawberry smoothie popsicles with just 3, ultra-healthy ingredients - organic frozen strawberries, a can of full fat coconut milk, and Genuine Health's fermented plant based protein powder in the flavour vanilla. That's seriously it! This recipe is all made in a blender, so there's minimal cleanup, and then you pour straight into your popsicle moulds. Easy, delicious, and so healthy! Genuine Health's protein powder is fermented, which makes the plant protein easier to digest and absorb. It's vanilla flavour compliments the strawberries and coconut perfectly! Makes 10 popsicles

Ready in 15 minutes + freeze overnight

 

Ingredients


Popsicles

600 grams (1 bag) frozen organic strawberries

1 400 mL can organic full fat coconut milk

2 scoops Genuine Health fermented plant based protein powder, vanilla flavour


Chocolate coating

2 tablespoons coconut oil

2 tablespoons cocoa powder

2 tablespoons coconut nectar


Instructions


For the popsicles, blend together coconut milk with protein powder until fully combined. Slowly add all the strawberries while blending, until thick and smooth. Pour into popsicle moulds, and freeze overnight.


The following morning, melt the coconut oil, and stir in the cocoa powder and coconut nectar. Spoon or drizzle this over the popsicles. It will harden immediately.
