Chocolate chip banana blondies



Chocolate and banana - such a crowd pleaser, right? These blondies are so delicious, you'd never guess that this recipe was actually an accident. The first time I experimented this recipe I was trying to make a gluten free banana bread, but when I sliced it and went in for a bite, I couldn't figure out what I was eating; it tasted like banana bread, but it had the texture of a chewy blondie. Sooo I tested it again, baking it in a square dish instead of a loaf pan, added chocolate chips, and bam - chocolate chip banana blondies. These are simple, yummy, and don't require buckets of sugar or oil. You have to try them!


This recipe is vegan, gluten free, and refined sugar free.

Serves 12

Ready in 45 minutes

 

Ingredients


345 grams banana

112 grams almond flour

112 grams gluten-free all purpose flour

36 grams coconut flour

30 grams natural peanut butter

90 grams dairy-free dark chocolate chips

3/4 cup water

2 tablespoons pure maple syrup

1 teaspoon pure vanilla extract

1 tablespoon baking powder

1/4 teaspoon sea salt


Instructions

  1. Preheat oven to 375 F

  2. In a large mixing bowl, combine flours, 60 grams of chocolate chips, baking powder, and salt

  3. In a blender, blend banana, water, peanut butter, vanilla, and maple syrup until smooth

  4. Pour the banana mixture into the bowl with the dry ingredients and mix until well combined

  5. Pour batter into a greased and floured 8x8 baking dish

  6. Top with remaining chocolate chips

  7. Bake for 30-35 minutes, until golden on top and around the edges, and a toothpick comes out clean from the centre

 

Remember

  • Use ripe and spotty bananas! They're sweeter.

  • Maple syrup is optional, but it just adds an extra hint of sweetness
