Crispy cheesy roasted broccoli



It feels kinda weird to be sharing a simple broccoli recipe with you all, but this broccoli is seriously delicious and addictive. It has a deep roasted flavour, with a cheesy and garlicky light crunch, and a hint of fresh lemon to cleanse the palette, and get you ready for the next bite. You absolutely must put this in your vegetable rotation! Your family will thank you.


This recipe is vegan, gluten free, and refined sugar free.

Serves 2-4

Ready in 40 minutes

 

Ingredients


1 large head broccoli, cut into florets

2 tablespoons olive or avocado oil

1 1/2 tablespoons garlic powder

3 tablespoons nutritional yeast

1 teaspoon cracked black pepper

1/2-1 teaspoon sea salt

1-2 tablespoons fresh lemon juice


Instructions

  1. Preheat oven to 425 F

  2. Toss broccoli florets with oil, garlic powder, nutritional yeast, and salt

  3. Bake on a large pan for 25-30 minutes, until crispy. Flip halfway through

  4. Serve with fresh black pepper and a squeeze of fresh lemon

 

Remember

  • Use a large baking tray so that the broccoli can be evenly spaced out. If they're too close together, they will steam instead of roast. Then they won't get crispy, and it will be sad for you
