Mango-avocado-cucumber salad with fresh mint and basil



The weather is really getting hot here in Niagara, so I thought it would be the perfect time to share one of my favourite quick and fresh summer salads. This salad was inspired by a couple of my favourite sushi rolls; avocado-mango, and avocado-cucumber. Basically, if you add avocado, I'm in. This salad is full of simple, fresh flavours and it's so easy to throw together. This is a must try for a hot day when the last place you want to be is in the kitchen.


This recipe is vegan, gluten free, and refined sugar free.

Serves 2 as an appetizer

Ready in 10 minutes

 

Ingredients


1 mango, cubed

1 avocado, cubed

1 cucumber, cubed

1/4 cup fresh basil, chopped

1/4 cup fresh mint, chopped

1/8 teaspoon sea salt

1/4 teaspoon red pepper flakes


Instructions

  1. Cube the mango, avocado, and cucumber

  2. Wash, dry, and chop herbs

  3. Gently toss the fruits and vegetable with the herbs. Add a pinch of salt

  4. Serve in a bowl with red pepper flakes to garnish

 

Remember

  • If you're skeptical of this salad not having a dressing, don't be. The mango is juicy, the avocado is creamy, and the cucumber is 96% water. There's no way this salad could be dry!
