Despite the unassuming appearance, this sandwich is super complex, interesting, flavourful, and so many other adjectives that I haven't really used to describe a sandwich before this one. Give it a go!

1 cup cooked chickpeas, mashed
2 tbsp vegan mayo (sub avocado)
2 tsp rice vinegar
1 tbsp dijon mustard
1 tbsp miso paste
1 tsp sriracha
1 tbsp sesame seeds, toasted
1/4 cup roasted nori, chopped
Combine all ingredients thoroughly and marinate in the refrigerator for at least one hour.
Serve on grainy toast piled high with baby spinach, shredded carrot, and your favourite kimchi.
