Sweet and spicy crunchy baked cauliflower wings

Truly, I've tried so, sooo many cauliflower wing recipes, and though there have been many good ones, I can confidently say that my original recipe here are the crunchiest, and most delicious cauli wings that I've ever had. I know you will absolutely love them! I chose a sweet and spicy sauce to share with you today, but any sauce you like is bound to be amazing on these. Enjoy!

Ingredients
1 large head of cauliflower, cut into florets
Wet batter
2/3 cup unbleached all purpose flour
2 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp chili powder
1/4 tsp cayenne powder
2 tsp poultry seasoning
1 tsp salt
2 tsp hot sauce
2/3 cup + 2 tbsp water
Dry breading
1 cup unseasoned breadcrumbs
2 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp chili powder
1/4 tsp cayenne powder
2 tsp poultry seasoning
1 tsp salt
Sweet and spicy sauce
4 tbsp avocado oil or vegan butter
4 tbsp hot sauce
4 tbsp coconut nectar
2 scallions, finely chopped
4 cloves garlic, thinly sliced
pinch of salt
Instructions
Cut cauliflower into equally sized florets.
Create the wet batter by mixing the flour with the spices, and then slowly adding into the water until thick and smooth.
Create the dry breading by thoroughly combining the breadcrumbs with the seasonings.
Dip each piece of cauliflower into the wet batter to fully coat, and then into the dry batter to fully coat. Then, space the cauliflower florets out evenly on a large lined baking sheet.
Bake cauliflower at 425 F for 30 minutes, flip, and bake for another 15-20 minutes, until crisp and golden.
For the sauce, simmer all ingredients (except the scallions) together on low, just long enough to take the sharpness out of the fresh garlic.
Toss the baked cauliflower in the sauce and enjoy!
