Watermelon, cucumber, and jalapeno salad

This salad is seriously refreshing! I love the contrast of flavours; sweet watermelon, spicy jalapeno, and cooling cucumber and mint. It's a summer must-have, and it's terribly easy to make. Just chop up the fruit and veggies and herbs, throw them into a bowl, and toss in a quick homemade vinaigrette. This is a really interesting way to show off watermelon, and it's definitely a new favourite.

Ingredients
Salad
3 cups english cucumber, chopped into 1/4 inch thick half moons
3 cups watermelon, chopped into 1/2 or 1 inch cubes
1/4 cup fresh mint, chopped
2 jalapenos, finely chopped into circles
Vinaigrette
1/4 cup extra virgin olive oil
2 tablespoons unseasoned rice vinegar
1 tablespoon coconut nectar
salt & to taste
Instructions
Whisk together the vinaigrette ingredients and refrigerate until the salad is ready
Chop up the cucumber, watermelon, onion, mint, and jalapeno. Toss them together in a large bowl. Add in the vinaigrette and serve immediately
Remember
This salad is best served fresh. If stored in the fridge overnight, or even for a few hours, too much liquid is drawn out of the watermelon and cucumber because of the salt in the vinaigrette. If you want to make this ahead of serving time, store the salad and the vinaigrette separately, and combine just before you're going to eat it
