Hummus and roasted vegetable naan pizza



My goal for 2018 is to put hummus on as many things as I can. Here is a super quick and easy meal that requires just a couple make-ahead components, allowing it to be thrown together in minutes whenever you want it! It's really simple, but that's what makes it so delicious. Every ingredient is identifiable and enjoyable. For this naan pizza, I used two ingredients from previous recipes, my lemon-garlic hummus, and cheesy roasted broccoli. Then, I just added some sliced fire roasted red peppers, and a few whole chickpeas for extra texture. Naan bread is an indulgence we all owe to ourselves. It's soft and chewy and the perfect canvas for our beautiful fresh ingredients! If you avoid dairy like me, make sure you double check the ingredients when buying naan, because most are made with yogurt!


This recipe is vegan, refined sugar free, and can be made gluten free.

Serves 1 for lunch, 2 as an appetizer

Ingredients


1 slice of naan bread (sub gluten-free pita if desired)

1/4 cup fire roasted red peppers, sliced

1/4 cup whole cooked chickpeas


Instructions

  1. Heat naan on a dry skillet over medium-high heat until warmed through

  2. Spread hummus evenly onto the naan

  3. Top with broccoli, peppers, and chickpeas
