Carrot cake bites with pecans and cinnamon



These raw carrot cake bites seriously taste like carrot cake batter rolled in pecans. But, they're so healthy, and convenient, too; the perfect on-the-go pick-me-up. I was gifted @livenaturalnow's organic Better Stevia with Monkfruit from @vistamagcanada to use for this recipe, and it added just the right amount of sweetness to make these feel like a real treat.

Ingredients


1/2 cup rolled oats

1/2 cup pitted medjool dates

1/4 cup raw whole pecans

2 tbsp raw tahini

1 tsp vanilla extract

1/2 tsp ceylon cinnamon

1/4 tsp himalayan salt

1/2 cup shredded carrot


Instructions


Pulse everything but the carrots together in the food processor, beginning with the dry ingredients. Add the wet ingredients and continue to pulse and process until combined and uniform in texture. Transfer to a mixing bowl and fold in the shredded carrot. Roll the mixture into balls, then roll in toasted pecan crumbs mixed with a pinch of cinnamon and salt!
