Chocolate chia protein pudding



Need a break from smoothie bowls? Look no further - this chocolate chia pudding is protein-packed and a perfect pairing for your favourite seasonal fruits. I love bowls like this because they're easy to throw together with whatever you have in the kitchen; there are endless possibilities and you can add any fruits, nuts, and flavours you like. I chose blueberries, fresh mango chunks, hemp hearts, and sunflower seeds for my toppings, with a few clusters of granola and leaves of micro basil for decoration. This pudding is thick and rich, and tastes like dessert for breakfast!


This recipe is vegan, gluten free, and refined sugar free.

Serves 2

Ready in 5 minutes + overnight

 

Ingredients


Pudding

1/4 cup whole chia seeds

1 cup non-dairy milk

1 scoop plant-based protein powder, chocolate flavour

1 tablespoon cocoa or cacao powder

1 tablespoon coconut sugar


Toppings

1/4 cup blueberries

1/4 cup mango chunks

1 tablespoon hemp hearts

1 tablespoon sunflower seeds

2 tablespoons granola clusters


Instructions

  1. In a blender, blend all pudding ingredients until smooth

  2. Pour pudding into a bowl or container and let thicken overnight

  3. The following morning, top with your favourite fruits, nuts, seeds, and granola

 

Remember

  • Serve chilled. Store in the refrigerator for up to three days for maximum freshness
