Chocolate avocado fudge with cacao nib crunch



This has to be my favourite chocolate recipe I have posted to date. This is super easy, super chocolatey, and probably the most healthy fudge recipe in existence. It all comes together within minutes in a food processor, and sets up in the fridge in as little as one hour. The silky smooth texture and richness factor make this dessert taste way more fancy than it actually is!


This recipe is vegan, gluten free, and refined sugar free.

Makes 12

Ready in 1 hour, 10 minutes

 

Ingredients


4 ounces cacao butter, melted

1 avocado (about 1/2 cup)

1/3 cup unsweetened, good quality cocoa powder

2/3 cup coconut sugar

1/4 teaspoon salt

2 tablespoons cacao nibs


Instructions

  1. In a good processor, pulse together the melted cacao butter and coconut sugar until smooth. Then, add remaining ingredients (except the cacao nibs) and continue to blend until smooth

  2. Pour fudge into a paper lined loaf pan and tap it around a bit so it's evenly distributed

  3. Sprinkle the top of the fudge with the cacao nibs

  4. Refrigerate for at least one hour before serving

  5. Slice fudge into 12 equal squares

 

Remember

  • If you don't have cacao nibs, you can substitute chopped nuts
